It’s not always easy keeping on track health wise. I know what I need to do yet there’s always a temptation to go slightly off the path. Occasionally I like something sweet so having a healthy choice to hand in the pantry is always a must, dipping into my 18 year old son’s organic digestive biscuit tin isn’t an option, not very often anyway!
So what’s the choice in my house? Well, at this time of year there’s great strawberries, peaches etc and in the winter months I favour medjool dates. We also make a healthy snack which we call ‘Bliss Balls’, they’re gluten free and they can also be dairy free, depending on your choice of topping.
Recipe: 400g of mixed nuts but not peanuts, desiccated coconut to taste, 6 medjool dates chopped small, ¼ cup of water. Topping – 100g of 75% melted dark chocolate and this amount covers around 20 balls. If you’re not a chocolate fan or you are dairy free then try desiccated coconut or organic cocoa to cover them.
Method: Blitz nuts in a blender until ground then transfer into a bowel and add desiccated coconut, you can adjust the coconut according to your taste. Add the chopped dates and to this add the water slowly, mixing all the time. Then take approximately a teaspoon of mixture and shape into a ball with your hands. Put the balls into the fridge to harden and once ready then cover with the topping of your choice and you can store them in the fridge for at least a week. They do contain a fair amount of calories so if you are trying to lose weight then don’t overdo it!
